Mozzarella di Bufala
There's no going back to ordinary processed Mozzarella once
you've tasted Mozzarella di Bufala. This cheese is produced
entirely from the milk of the European Water Buffalo obtained
from a single milking early in the morning. Up until recently
you needed to go to an Italian or cheese specialty store to
find it, but now it can be found in Coop and other major food
stores.
Recipees - Alternate slices of Mozzarella di Bufala and Tomatoes
on a plate. Drizzel with truffle oil (or a combination of
truffle oil and good quality olive oil), add a pinch of white
pepper. Sprinkle with basil.
In the summer, at the Auberge Lion d'Or in Versoix, they
serve a marvelous combination of Mozzarella di Bufala, Sliced
white peaches, basil and Italian truffle oil from the owner's
family farm.
